Ingredients
  

For the Sauce
  • 2 tablespoons Salted Butter for richness and flavor
  • 1 pound Lean Ground Beef or ground turkey/chicken as lighter option
  • 1 medium Yellow Onion or shallots/green onions as substitutes
  • 2 cloves Garlic fresh minced preferred
For the Gnocchi
  • 16 ounces Potato Gnocchi shelf-stable or fresh
For the Flavoring
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Pepper black or to taste
  • 1 teaspoon Paprika smoked paprika for more depth
  • 1/2 teaspoon Ground Cumin omit for milder flavors
For the Sauce Base
  • 10 ounces Rotel Diced Tomatoes and Green Chiles or regular diced tomatoes
  • 1 cup Beef Broth chicken or vegetable can work too
  • 1 cup Heavy Cream light cream or milk can be used
For the Topping
  • 1 cup Shredded Mild Cheddar Cheese or pepper jack for extra kick
  • 2 tablespoons Sliced Green Onion for garnish

Method
 

Cooking Instructions
  1. Melt the Butter: In a large cast iron skillet, melt salted butter over medium-high heat.
  2. Toast the Gnocchi: Add potato gnocchi to the skillet, cooking for 2 minutes on each side until golden brown.
  3. Brown the Beef: Add lean ground beef, seasoning with salt, pepper, cumin, and paprika. Sauté with diced onion and minced garlic until browned.
  4. Mix in the Sauce: Stir in Rotel diced tomatoes and broth to the beef, add toasted gnocchi, and bring to a gentle boil.
  5. Cream it Up: Remove from heat, stir in heavy cream and half of the cheese. Top with remaining cheese and broil for 2-3 minutes.
  6. Garnish and Serve: Remove from oven, garnish with sliced green onions, and serve warm.
