How to Make Cheesy Chicken Quesadillas
- Heat the oil or butter in a large pan or griddle over medium heat.
- Layer 1-2 tortillas in the pan, then sprinkle 1/3 to 1/2 cup of shredded cheese over each tortilla. Follow this by adding 1/3-1/2 cup of shredded chicken, a couple of tablespoons of beans, and a handful of green onions and cilantro for a burst of flavor.
- Fold the tortillas in half over the fillings. Cook until golden brown on the bottom, then flip gently and continue to cook until the other side is golden brown and the cheese is melted.
- Repeat the process with the remaining tortillas, cheese, and filling ingredients until everything is cooked.
- Slice the quesadillas into wedges and serve with sour cream, guacamole, and pico de gallo or salsa.

Optional: Garnish with additional cilantro for extra freshness. Leftover rotisserie chicken works well.
