Preparation
- Preheat your oven to 400°F (200°C). Grease your 3-quart baking dish with unsalted butter.
- Using a mandoline, slice sweet potatoes, parsnips, and beets into very thin rounds.
- Pour 4 tablespoons of heavy cream over sweet potatoes and parsnips, 2 tablespoons over beets. Top with ½ ounce of Parmesan and 1 teaspoon of thyme.
- Pour remaining ¼ cup cream into the greased dish, sprinkle with remaining Parmesan and minced garlic. Layer vegetables in alternating columns.
- Season the top layer with salt and pepper, cover with foil, and bake for 30 minutes.
- Remove the foil, sprinkle the shredded Gruyère on top, and bake uncovered for another 18-20 minutes.
- Garnish with fresh thyme before serving.
