  • 1 can (14 oz) coconut milk light coconut milk can reduce calories
  • 2 cups fish or chicken broth vegetable broth for vegetarian version
  • 3 tablespoons lime juice freshly squeezed is best
  • 1 tablespoon fish sauce soy sauce as alternative for vegetarian
  • 1 teaspoon sugar honey or coconut sugar can be substituted
  • salt and pepper season to taste
For Garnishing
  • 1/4 cup fresh cilantro, chopped adds fresh flavor

How to Make Coconut Lime Fish Soup
  1. Pour the olive oil into a large pot over medium heat. Sauté the onion until translucent, about 3-4 minutes.
  2. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Stir in the sliced red bell pepper and cook for 3-4 minutes until softened.
  4. Pour in the coconut milk and broth, stirring to combine. Bring to a gentle simmer.
  5. Add lime juice, fish sauce, and sugar, then season with salt and pepper. Let simmer.
  6. Gently add the fish pieces, ensuring they are submerged, and simmer for 5-7 minutes until cooked through.
  7. Remove from heat and fold in chopped cilantro.
  8. Ladle the soup into bowls, garnishing each with lime wedges.
