  • 2 Medium Avocados Ensure they are ripe.
  • 4 cups Fresh Baby Spinach Can substitute with arugula or mixed greens.
  • 1 cup Frozen Sweet Peas May use fresh peas if blanched briefly.
  • 1 cup Frozen Corn Fresh corn can also be used, cooked until tender.
  • 1 cup Baby Tomatoes Can substitute with cherry tomatoes.
For the Dressing
  • 2 tbsp Lemon Juice Use fresh juice for best flavor.
  • 1 clove Garlic Can omit for a milder taste.
  • 1 tsp Sea Salt Adjust to taste.
  • 1 tsp Black Pepper Optional based on preference.

How to Make Creamy Avocado Pasta Salad
  1. Boil 12 oz of rotini in a large pot of salted water for about 10 minutes. In the last 4 minutes, add in the frozen peas and corn. Drain and rinse under cold water.
  2. In a blender, combine half of the baby spinach, 2 ripe avocados, lemon juice, garlic, sea salt, and black pepper. Blend until smooth and creamy. Add remaining spinach and blend again.
  3. In a large mixing bowl, gently toss the drained pasta and veggies with the creamy avocado dressing. Fold in halved baby tomatoes and any remaining avocado slices.
  4. Chill the salad in the fridge for 30 minutes before serving. Serve cold and enjoy!
