  • 3 medium Cucumbers Persian or English varieties preferred
  • ¼ cup Fresh Dill Fresh only
  • 1 small Red Onion Finely sliced
For the Dressing
  • 1 cup Greek Yogurt Can substitute with sour cream or coconut yogurt
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Lemon Juice Apple cider vinegar can be a substitute
  • 1 clove Garlic Grated
  • Salt To taste
  • Pepper To taste

Method
 

How to Make Cucumber Dill Salad
  1. In a small bowl, mix together Greek yogurt, extra virgin olive oil, lemon juice, grated garlic, salt, and pepper until smooth and creamy.
  2. Slice the cucumbers lengthwise, then cut into 3mm thick half-moons.
  3. Finely slice the red onion.
  4. In a large salad bowl, toss together the cucumbers, red onion, fresh dill, and dressing until well-coated.
  5. Serve immediately at room temperature, or chill in the fridge for about 30 minutes before serving.
