How to Make Parmesan Mashed Potatoes
  1. Peel and cut your potatoes into even-sized chunks. Place them in a large pot of salted water and boil until tender, about 15-20 minutes.
  2. Once cooked, drain the potatoes well and return them to the pot. Mash until smooth.
  3. Gently incorporate the cream cheese, sour cream, butter, salt, and black pepper into the mashed potatoes.
  4. Carefully fold in the Parmesan cheese.
  5. Transfer the potato mixture into a greased baking dish, smoothing the top.
  6. If making ahead, cover the dish and refrigerate for up to 2 days.
  7. Preheat your oven to 350°F (175°C) and bake for 30-40 minutes.
