  • 9 oz Baby Spinach Fresh is best, but frozen works when squeezed to remove excess water.
  • ¼ tsp Salt Adjust to personal taste.
  • 5 oz Cream Cheese Substitute with Boursin or ricotta if preferred.
  • 1 oz Parmesan Cheese Freshly grated; add more for serving!
  • ¼ tsp Nutmeg Ground or freshly grated; adjust to your liking.
  • Black Pepper To taste.

Cooking Steps
  1. Bring a pot of salted water to a boil and add your pasta. Cook according to package instructions until al dente, then reserve ½ cup of the cooking water before draining.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until it becomes fragrant—don’t let it burn!
  3. Gradually toss in the washed spinach, seasoning with salt. Stir continuously until the leaves are wilted, which should take about 2-3 minutes.
  4. Stir in the cream cheese, adding the reserved pasta water gradually until well combined. Blend in the grated parmesan and nutmeg, adjusting the flavors and consistency to your liking.
  5. Toss the drained pasta with the creamy spinach sauce in the skillet. Serve immediately, finishing with a drizzle of olive oil and more grated parmesan, plus a sprinkle of black pepper.
