Ingredients
  

For the Batter
  • 2 cups Dosa batter substitute with store-bought idli-dosa batter if needed
  • 1 cup Rice flour can be omitted if necessary
  • 2 tablespoons Cornflour can be replaced with tapioca flour
For Seasoning
  • 10 leaves Curry leaves fresh is best
  • 6 cloves Garlic chopped
  • 1 tablespoon Ginger chopped
  • 1 teaspoon Red chile powder adjust to taste
  • 1 teaspoon Garam masala powder or substitute with cumin, coriander, and cardamom
  • 1 teaspoon Salt adjust according to taste
  • 1 cup Oil for cooking and frying
  • 1 teaspoon Cumin seeds can be omitted
  • 2 pieces Green chilies slit
  • 1 cup Yogurt or substitute with plant-based yogurt

Method
 

How to Make Appu 65
  1. Prepare the Appes: Heat a paniyaram pan over medium heat. Grease each hole with oil (if not nonstick). Pour dosa batter into the holes and cook for 2-3 minutes until golden brown. Flip and cook the other side.
  2. Make the Coating: In a mixing bowl, combine rice flour, cornflour, curry leaves, garlic, ginger, red chile powder, garam masala, and salt. Gradually add water until a medium-thick batter forms.
  3. Fry the Appes: Heat oil in a frying pan. Dip each cooked appe in the batter and fry until golden and crispy, draining on paper towels.
  4. Prepare Seasoning: In a separate pan, heat more oil. Sauté cumin seeds, garlic, and curry leaves until garlic is golden. Add green chilies, red chile powder, yogurt, and salt, stirring until combined.
  5. Combine: Toss the fried appes in the seasoning mixture until well-coated. Serve hot.
