Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Brush the crispy chicken tenders with tikka masala sauce and place them on a baking sheet.

  4. Cook the quinoa according to package instructions and fluff it with a fork.
  5. If making pickled red onions, stir together the onions and vinegar; let sit for at least 10 minutes.
  6. In a blender, combine fresh mint, yogurt or mayo, and a pinch of salt; blend until smooth.
  7. Assemble bowls by layering quinoa, then crispy chicken, cucumbers, and pickled onions.
