- In a large pot, bring salted water to a boil before adding the gnocchi. Cook until they float to the surface, about 2-3 minutes. Use a slotted spoon to remove them and set aside.
- In a large frying pan, pour in olive oil and heat over medium-high until it shimmers.
- Carefully add the boiled gnocchi in a single layer. Allow them to fry undisturbed for 2-3 minutes until they are golden brown. Gently stir to crisp all sides, cooking for an additional 2-3 minutes.
- Lower the heat to medium and add the minced garlic to the pan. Sauté for about 1 minute, or until fragrant.
- Toss in the fresh spinach and stir until it's wilted, around 2-3 minutes.
- Sprinkle in salt, pepper, and red pepper flakes (if using). Stir in crumbled feta cheese until well-distributed before serving.
