  • 1 pack Gnocchi Opt for store-bought or homemade
  • 2 tbsp Olive Oil Can substitute with avocado oil
For the Vegetables
  • 2 cups Fresh Spinach Can be swapped with kale or Swiss chard
  • 2 cloves Garlic Fresh is preferred
For Seasoning
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Black Pepper Freshly cracked is preferred
  • 1/4 tsp Red Pepper Flakes Optional
For the Finish
  • 1 cup Feta Cheese Can substitute with goat cheese

Method
 

Cooking Instructions
  1. In a large pot, bring salted water to a boil before adding the gnocchi. Cook until they float to the surface, about 2-3 minutes. Use a slotted spoon to remove them and set aside.
  2. In a large frying pan, pour in olive oil and heat over medium-high until it shimmers.
  3. Carefully add the boiled gnocchi in a single layer. Allow them to fry undisturbed for 2-3 minutes until they are golden brown. Gently stir to crisp all sides, cooking for an additional 2-3 minutes.
  4. Lower the heat to medium and add the minced garlic to the pan. Sauté for about 1 minute, or until fragrant.
  5. Toss in the fresh spinach and stir until it's wilted, around 2-3 minutes.
  6. Sprinkle in salt, pepper, and red pepper flakes (if using). Stir in crumbled feta cheese until well-distributed before serving.
