Sauce Preparation
  1. In a medium saucepan over medium-high heat, mix together honey, minced garlic, and soy sauce. Stir frequently until well combined and bubbly.
  2. In a small bowl, combine cornstarch with 1/4 cup of water. Stir this into the saucepan until the mixture thickens, about 1-2 minutes. Set aside.
Chicken Cooking
  1. In a large skillet, pour in enough vegetable oil to cover the bottom, heating over medium-high heat until hot.
  2. In a large bowl, whisk together all-purpose flour, dried thyme, oregano, paprika, and cayenne pepper. Season with kosher salt and black pepper.
  3. Dredge each piece of boneless skinless chicken breast in the flour mixture, dip in beaten eggs, then coat again with the flour mixture.
  4. Carefully add coated chicken pieces to the hot oil, frying 2-3 pieces at a time for 3-4 minutes on each side until golden brown.
  5. Place fried chicken on a paper towel-lined plate to absorb excess oil.
  6. Drizzle honey garlic sauce over hot fried chicken pieces before serving.
