Sauce Preparation
- In a medium saucepan over medium-high heat, mix together honey, minced garlic, and soy sauce. Stir frequently until well combined and bubbly.
- In a small bowl, combine cornstarch with 1/4 cup of water. Stir this into the saucepan until the mixture thickens, about 1-2 minutes. Set aside.
Chicken Cooking
- In a large skillet, pour in enough vegetable oil to cover the bottom, heating over medium-high heat until hot.
- In a large bowl, whisk together all-purpose flour, dried thyme, oregano, paprika, and cayenne pepper. Season with kosher salt and black pepper.
- Dredge each piece of boneless skinless chicken breast in the flour mixture, dip in beaten eggs, then coat again with the flour mixture.
- Carefully add coated chicken pieces to the hot oil, frying 2-3 pieces at a time for 3-4 minutes on each side until golden brown.
- Place fried chicken on a paper towel-lined plate to absorb excess oil.
- Drizzle honey garlic sauce over hot fried chicken pieces before serving.
