How to Make Onion Bhajis
  1. In a large mixing bowl, blend the gram flour, baking powder, salt, cumin, and turmeric until well combined.
  2. Stir in the green chillies, cilantro, lemon juice, and water. Mix until you have a thick, smooth batter.
  3. Toss the thinly sliced onions into the bowl, ensuring they're fully coated with the batter.
  4. In a large skillet over medium heat, add enough oil to create a 1-inch layer. Heat until shimmering.
  5. Carefully spoon dollops of the batter-coated onions into the hot oil, frying about 3-4 bhajis at a time.
  6. Cook each bhaji for about a minute on each side or until golden brown and crisp.
  7. Using a slotted spoon, transfer the bhajis to a wire rack to drain excess oil.
