  • 2 cups vegetable oil neutral oil with high smoke point
For the Roll
  • 2 cups sushi rice seasoned with rice vinegar
  • 4 sheets nori high-quality
  • 1 medium avocado ripe
  • 1 medium cucumber sliced into sticks
Serving Condiments
  • 1 cup soy sauce for dipping
  • 1 cup pickled ginger
  • 1 tablespoon wasabi to taste

Preparation
  1. Prepare the Shrimp Tempura: Start by mixing your tempura batter according to the package instructions, using ice-cold water. Heat vegetable oil in a pot to 350°F (175°C) before dipping shrimp in the batter and frying until golden brown, about 2-3 minutes. Drain on paper towels.
  2. Assemble Sushi Rolls: Lay a sheet of nori on a sushi mat and gently spread a thin layer of seasoned sushi rice over it, leaving a little space at the top. Line up your crispy shrimp tempura, creamy avocado slices, and refreshing cucumber sticks on the rice.
  3. Roll and Slice: Carefully roll the sushi tightly using the mat, applying gentle pressure to keep everything snug. Slice into 8 pieces with a sharp, dampened knife for clean edges.
  4. Serve: Present your delicious shrimp tempura rolls immediately with soy sauce, pickled ginger, and wasabi on the side. Optionally, drizzle with spicy mayo or eel sauce for elevated flavor!
