How to Make Crock Pot Bourbon Chicken
  1. Trim any excess fat off the boneless, skinless chicken thighs and cut them into bite-sized pieces.
  2. In a medium bowl, whisk together light brown sugar, soy sauce, bourbon, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic until well combined.
  3. Place the chicken pieces into your slow cooker and pour the sauce over the top, ensuring every piece is coated.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours until chicken is tender.
  5. Remove chicken from pot and mix cornstarch with water to create a slurry; stir into sauce and return chicken to pot to thicken for 5-10 minutes.
  6. Garnish with chopped green onions before serving.
