  • 1 tsp Vanilla Extract
For the Margarita Frosting
  • 1/2 cup Dairy-Free Butter
  • 1/4 cup Tequila Can omit or replace with lime soda/extract.
  • 2 cups Powdered Sugar
  • 1 tsp Vanilla Extract
  • 2 tbsp Lime Juice
  • 1-2 tbsp Almond Milk For adjusting texture.
  • 1 pinch Salt Balances sweetness.

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and line a muffin pan with 16 cupcake liners.
  2. Create a buttermilk substitute by combining almond milk and white vinegar. Let it sit for 5 minutes.
  3. Whisk together the dry ingredients: gluten-free flour, baking powder, salt, and baking soda.
  4. Cream the dairy-free butter and half of the sugar until slightly fluffy, then add remaining sugar and vegetable oil.
  5. Incorporate the large eggs and vanilla extract, mixing until just combined.
  6. Blend in half of the dry mixture, followed by the buttermilk substitute, lime juice, and lime zest.
  7. Fill each cupcake liner about ⅔ full and bake for 15–18 minutes.
  8. Prepare the frosting by beating dairy-free butter until creamy, then gradually adding powdered sugar.
  9. Frost the cooled cupcakes generously with the creamy tequila-lime frosting.
