  • 4 cups All-purpose flour
  • 1 tablespoon Baking powder to help the cookies rise

  • 0.5 cups Baileys Irish Cream adds signature flavor
For the Filling
  • 8 ounces Unsalted butter creamed with sugar
  • 2.5 cups Powdered sugar for a light texture
  • 6 tablespoons Baileys Irish Cream for indulgent flavor
  • 2 teaspoons Trablit coffee extract for depth of flavor

Method
 

Instructions
  1. Cream together butter and sugar in a large mixing bowl until light and fluffy, about 3-5 minutes.
  2. Add in the egg and egg yolk, mixing until fully incorporated.
  3. Mix in the vanilla extract, blending seamlessly.
  4. Combine dry ingredients by alternating adding flour, baking powder, and salt with Baileys until smooth.
  5. Wrap the dough in plastic wrap, then refrigerate for a few hours, preferably overnight.
  6. Roll out the chilled dough and use a shamrock cookie cutter to shape cookies.
  7. Chill cut cookies on a baking sheet for at least 30 minutes before baking.
  8. Bake in a preheated oven at 350°F for 12-13 minutes.
  9. Make the filling by creaming butter, powdered sugar, and salt together until fluffy.
  10. Add Baileys and Trablit coffee extract to filling, blending until smooth.
  11. Fill cookies using a piping bag and top with another cookie.
  12. Chill filled cookies for about 15-20 minutes in the refrigerator.
  13. Dip cookies in melted dark chocolate and decorate with sprinkles.
