How to Make Chocolate Brownie Yule Log
  1. Preheat your oven to 180°C (160°C fan) and line a Swiss roll tin with parchment paper.
  2. In a mixing bowl, beat the eggs and golden caster sugar until thick and pale.
  3. Gently fold in the sifted self-raising flour and cocoa powder.
  4. Slowly add the melted unsalted butter into the batter, folding gently.
  5. Pour the batter into the tin and bake for 10-12 minutes until springy.
  6. Turn the brownie onto parchment paper and roll it up from the short edge to cool.
  7. Whip the double cream with icing sugar and vanilla extract until soft peaks form.
  8. Unroll the cooled brownie, spread the creamy filling, and roll it back tightly.
  9. Heat double cream, pour it over dark chocolate, and stir until smooth for ganache.
  10. Spread the ganache over the rolled brownie, creating a rustic effect, and dust with icing sugar.
