How to Make Chocolate Brownie Yule Log
- Preheat your oven to 180°C (160°C fan) and line a Swiss roll tin with parchment paper.
- In a mixing bowl, beat the eggs and golden caster sugar until thick and pale.
- Gently fold in the sifted self-raising flour and cocoa powder.
- Slowly add the melted unsalted butter into the batter, folding gently.
- Pour the batter into the tin and bake for 10-12 minutes until springy.
- Turn the brownie onto parchment paper and roll it up from the short edge to cool.
- Whip the double cream with icing sugar and vanilla extract until soft peaks form.
- Unroll the cooled brownie, spread the creamy filling, and roll it back tightly.
- Heat double cream, pour it over dark chocolate, and stir until smooth for ganache.
- Spread the ganache over the rolled brownie, creating a rustic effect, and dust with icing sugar.
