Preparation
- Preheat your oven to 300°F (150°C). Toast the raw pistachios for 15 minutes until fragrant and golden.
- Chop a portion of the pistachios for decoration and set aside.
Dacquoise Layers
- Reduce the oven temperature to 275°F (135°C). Beat the egg whites with cream of tartar until soft peaks form.
- Gradually add sugar and continue beating until stiff peaks are achieved. Gently fold in the chopped pistachios.
- Spread the pistachio meringue into prepared cake rings and bake for 1 hour until golden brown.
- Allow the dacquoise layers to cool completely before removing them from the rings.
Buttercream Preparation
- In a clean bowl, whip the egg yolks until pale. Cook sugar and water over medium heat until it reaches 240°F (115°C).
- Slowly whisk the syrup into the whipped yolks and then beat in the softened butter and dark rum until smooth.
Assembly
- Layer the cooled dacquoise discs with generous spoonfuls of buttercream, sprinkling chopped pistachios between each layer.
- Cover the entire cake with the remaining buttercream and refrigerate overnight.
- Optional: Decorate with more chopped pistachios for a delightful finishing touch.
