Preparation
- Soak noodles in cold water for 20-30 minutes for mung bean or warm water for sweet potato noodles until pliable.
- Finely mince the scallions, ginger, garlic, and yibin suimiyacai, reserving some scallion tips.
Cooking
- Warm a skillet and dry-fry preserved mustard greens until fragrant, then set aside.
- Heat Chinese roasted rapeseed oil in the same skillet, add minced pork, fry until fine, then stir in soy sauce and rice wine.
- Add remaining oil, then minced ginger and garlic; sauté until fragrant, add dry-fried yacai.
- Return minced pork, combine with doubanjiang, then add soaked noodles, covering with water or stock.
- Bring to a gentle boil, then cover and simmer for 5-10 minutes until noodles are cooked.
- Turn off heat, add reserved scallions and ground huajiao, mixing gently.
- Serve in a bowl, garnishing with scallion tips and optional sesame oil.
