Method
 

Steps
  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it to prevent sticking.
  2. In a mixing bowl, whisk together the avocado oil, eggs, maple syrup, and vanilla extract until well combined.
  3. In a separate bowl, combine the almond flour, coconut flour, baking powder, baking soda, coconut sugar, and apple cinnamon seasoning. Stir until thoroughly mixed.
  4. Gradually incorporate the dry ingredients into the wet mixture, folding gently until just combined.
  5. Gently fold in the shredded Gala apple until it’s evenly distributed throughout the batter.
  6. Use a spoon or ice cream scoop to fill each muffin cup about ¾ full with batter. Top with extra apple shreds and crushed nuts if desired.
  7. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
