For the Dressing
  • 1/4 cup Olive Oil Forms the base of the dressing
  • 2 tablespoons Lemon Juice Use freshly squeezed for best flavor
  • 2 cloves Garlic Minced, adjust according to preference
  • 1 teaspoon Sumac Optional, can be substituted with lemon zest

Instructions
  1. Make Dressing: In a bowl, whisk together olive oil, lemon juice, minced garlic, and optional sumac until well combined.
  2. Prep Ingredients: Rinse the chickpeas and black beans under cold water. Dice the cherry tomatoes, cucumber, and bell peppers into uniform pieces.
  3. Combine Salad: In a large mixing bowl, gently toss together chickpeas, black beans, halved cherry tomatoes, diced cucumber, olives, chopped parsley, and mint.
  4. Dress Salad: Drizzle prepared dressing over the salad and mix gently until everything is evenly coated.
  5. Rest: Cover the salad and let it sit at room temperature for 30 minutes to allow flavors to meld.
