Ingredients
  

For the Onions
  • 4 large Yellow or Sweet Onions Choose uniform sizes for even cooking.
  • 1 teaspoon Salt Essential for seasoning.
  • 2 tablespoons Olive Oil Adjust for a lighter meal.
For the Filling
  • 1 pound Ground Beef Can substitute with ground lamb.
  • 1 cup Long-Grain Rice Soak before using.
  • 1 small Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 1 tablespoon Fresh Parsley Can use dried if needed.
  • 1 tablespoon Fresh Mint Dried mint can substitute.
  • 1 teaspoon Ground Allspice Can swap with nutmeg and cloves.
  • 1/2 teaspoon Ground Cinnamon Be careful to not overpower.

For the Sauce
  • 2 cups Crushed Tomatoes Fresh tomatoes can be used.
  • 1 cup Beef or Vegetable Broth Choose based on dietary needs.
  • 1 teaspoon Dried Oregano Fresh oregano can substitute.
  • 1 tablespoon Fresh Dill Dried dill can work in a pinch.
  • 2 tablespoons Lemon Juice Freshly squeezed is ideal.

Method
 

Preparation
  1. Boil a large pot of salted water. Cut the tops and bottoms off the onions to create a flat surface. Carefully boil the onions for 10–12 minutes, until they’re soft but still intact. Cool slightly and peel layers into cups.
  2. In a skillet, heat olive oil over medium heat. Sauté the finely chopped small onion and minced garlic until translucent. Add the ground beef and cook until browned. Mix in the soaked rice, herbs, spices, salt, and pepper. Allow to cool slightly.
  3. Take about 2 tablespoons of the beef-rice mixture and carefully fill each onion cup. Place the stuffed onions seam-side down in a greased casserole dish.
  4. In the same skillet, sauté garlic in olive oil until fragrant. Add the crushed tomatoes, broth, oregano, dill, and lemon juice, then simmer for 5–7 minutes to meld flavors.
  5. Pour the sauce over the stuffed onions, covering them completely. Cover the dish with foil and bake at 375°F (190°C) for 45 minutes. Then remove the foil and bake for another 20–30 minutes, until the onions are golden and the sauce is bubbly.
  6. Allow to rest for 5–10 minutes before garnishing with fresh parsley or dill. Serve with lemon wedges for a zesty touch.
