Preparation
  1. Blanch Spinach: Bring a pot of water to a rolling boil. Gently add the fresh baby spinach and let it cook for 30 seconds until wilted. Protect that beautiful green color by immediately plunging it into ice water for a minute.
  2. Prepare Dressing: In a cozy little bowl, whisk together the sesame oil, soy sauce, rice vinegar, and any optional garlic or ginger. Mix until you have a harmonious blend of flavors.
  3. Combine and Toss: Once the spinach has cooled and drained well, pat it dry with a paper towel. In a large bowl, toss the spinach with the dressing.
  4. Garnish: Sprinkle the toasted sesame seeds generously over the top just before serving.
