Cooking Instructions
  1. In a large skillet, melt unsalted butter over medium-high heat. Add lemon slices and cook until golden brown, about 2-3 minutes per side, then set aside.
  2. Reduce heat and add olive oil, shallots, and garlic to the skillet. Sauté for about 3 minutes until softened and fragrant.
  3. Stir in harissa, cumin, paprika, and quinoa, toasting for 1-2 minutes until the spices become aromatic.
  4. Pour in the diced tomatoes, vegetable broth, and salt. Bring to a boil, then reduce to a gentle simmer. Cover and cook for 15-20 minutes until the quinoa is fluffy.
  5. Uncover and gently stir in fresh baby spinach until wilted. Remove from heat, stir in sliced almonds, and top with olives, parsley, and caramelized lemon slices.
