How to Make Red-Wine Jus
- Melt butter and sunflower oil in a saucepan over medium heat until fully melted and bubbly.
- Sauté finely chopped shallots and minced garlic until soft and translucent, about 3-4 minutes.
- Sprinkle in plain flour and cook for about 1 minute, stirring continually.
- Slowly add dry red wine, scraping up any browned bits from the pan, and bring to a simmer for about 2-3 minutes.
- Stir in beef stock, fresh thyme, black pepper, and kosher salt, and allow to simmer gently.
- Reduce heat and let simmer until thickened to about 1 cup, usually around 10-15 minutes.
- Finish with a swirl of cold butter for a silky mouthfeel before serving.
