For the Salad
  • 2 cups Roma Tomatoes Chopped
  • 1 each English Cucumber Sliced
  • 1 each Red Onion Thinly sliced
  • 2 each Avocados Sliced
  • 1 cup Corn Kernels Fresh preferred
  • 4 cups Romaine Lettuce Chopped
  • 1 pound Raw Shrimp Large
For Cooking
  • 2 tablespoons Unsalted Butter For cooking shrimp
  • 1 tablespoon Cajun Spice Adjust to taste
  • 2 cloves Garlic Pressed
For the Dressing
  • 1/4 cup Olive Oil Extra virgin recommended
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1/4 cup Cilantro Chopped
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper Fresh ground preferred

Method
 

Instructions
  1. In a large bowl, combine chopped Roma tomatoes, sliced cucumber, thinly sliced red onion, sliced avocados, corn, and chopped romaine lettuce.
  2. In a skillet, melt butter over medium heat. Add the Cajun spice and pressed garlic, then cook the shrimp until opaque and cooked through, about 3-5 minutes.
  3. In a small bowl, whisk together olive oil, lemon juice, chopped cilantro, sea salt, and black pepper.
  4. Pour the dressing over the salad and gently toss to combine. Add the cooked shrimp on top and serve immediately.
