  • 150 g Fresh or Frozen Prawns/Shrimp Deveined and finely minced
  • 60 g Hanpen Fish Cake Minced prawns can be substituted
  • 1 tsp Sake Can be omitted or replaced with water
  • ¼ tsp Ginger Juice Enhances flavor
  • 1 tbsp Cornflour/Corn Starch Essential binder
For the Clear Soup
  • 800 ml Dashi Stock Use ichiban-dashi for better flavor
  • 2 tsp Light Soy Sauce Balances flavors
  • tsp Salt Adjust to taste
For the Garnish
  • 4 slices Bamboo Shoots Can substitute with blanched vegetables
  • 4 Mitsuba Leaves Use blanched spinach or snow pea shoots if unavailable

Method
 

Preparation Steps
  1. Heat dashi stock in a pot over medium heat. Add soy sauce, sake, and salt; stir and bring to a gentle simmer. Toss in bamboo shoots and cook for one minute.
  2. Finely mince fresh shrimp by hand or blend in a food processor until smooth.
  3. In a mixing bowl, combine minced shrimp, diced hanpen, ginger juice, cornflour, and a pinch of salt. Mix until well blended.
  4. Bring a separate pot of water to a boil. Wet hands and shape mixture into balls, about the size of a golf ball. Carefully drop them into boiling water.
  5. Cook shrimp balls for approximately 5-7 minutes, until they float and are fully cooked. Use a slotted spoon to gently remove them.
  6. Place two cooked shrimp balls in each serving bowl. Reheat clear soup if needed, then pour over shrimp balls.
  7. Garnish with bamboo shoots and mitsuba before serving. Drizzle sesame oil if desired.
