Cake Preparation
- Preheat your oven to 350°F (175°C). Prepare a 13 x 9 inch baking dish with vegetable spray.
- In a mixing bowl, combine the strawberry cake mix, guava juice, eggs, and coconut oil. Mix on low speed for 30 seconds, then increase to medium-high for 2 minutes.
- Pour the batter into your prepared pan and bake for 24-26 minutes or until a toothpick comes out clean.
- Remove the cake from the oven and let it cool completely in the pan on a wire rack.
Cream Cheese Layer
- In a separate bowl, beat the cream cheese until fluffy. Gradually mix in the sugar and vanilla, then fold in the Cool Whip. Chill until ready.
- Spread the chilled cream cheese mixture on the cooled cake and refrigerate to set.
Guava Glaze
- In a saucepan, bring the guava juice and sugar to a boil. Mix cornstarch with water to form a slurry.
- Whisk the slurry into the boiling mixture until thickened, about 2-3 minutes.
- Allow the guava gel to cool slightly, then layer it over the cream cheese layer. Refrigerate until ready to serve.
