Making the Sorbet
- In a small saucepan over medium-high heat, combine the brut champagne, granulated sugar, and light corn syrup. Stir gently until it comes to a rolling boil, ensuring all the sugar dissolves.
- Once boiling, remove the saucepan from the heat and stir in the pomegranate juice.
- Pour the mixture into a container and place it in the freezer for at least 2 hours or overnight.
- After fully chilled, pour the mixture into your ice cream maker and churn according to package instructions.
- Spoon the completed sorbet into a freezer-safe container and freeze for an additional 4-6 hours.
- Scoop the sorbet into bowls and top with whipped cream and fresh pomegranate arils.
