Preparation Steps
- Dice the colorful vegetables, mince the garlic, and chop the fresh cilantro. Halve the olives.
- In a large bowl, coat the chicken pieces with adobo seasoning, black pepper, and oregano. Add veggies, garlic, olives, cilantro, lime juice, and cooking oil. Marinate for a few hours if possible.
- Heat oil in a large stew pot and add sugar, allowing it to caramelize. Brown the marinated chicken pieces for 5-6 minutes per side.
- Stir in the remaining marinade with the vegetables. Cook for 4-5 minutes until softened.
- Mix in the tomato paste and chicken broth; stir well and cover. Reduce heat and let it simmer for 45 minutes, stirring occasionally.
- Check for consistency and adjust sauce with more chicken broth if preferred. Garnish with cilantro and a squeeze of lime juice before serving.
