Method
 

Preparation Steps
  1. Dice the colorful vegetables, mince the garlic, and chop the fresh cilantro. Halve the olives.
  2. In a large bowl, coat the chicken pieces with adobo seasoning, black pepper, and oregano. Add veggies, garlic, olives, cilantro, lime juice, and cooking oil. Marinate for a few hours if possible.
  3. Heat oil in a large stew pot and add sugar, allowing it to caramelize. Brown the marinated chicken pieces for 5-6 minutes per side.
  4. Stir in the remaining marinade with the vegetables. Cook for 4-5 minutes until softened.
  5. Mix in the tomato paste and chicken broth; stir well and cover. Reduce heat and let it simmer for 45 minutes, stirring occasionally.
  6. Check for consistency and adjust sauce with more chicken broth if preferred. Garnish with cilantro and a squeeze of lime juice before serving.
