Ingredients
  

For the Batter
  • 1 medium Cauliflower fresh florets
  • 1 cup All-Purpose Flour or gluten-free flour
  • 1/2 cup Cornflour or cornstarch
  • 2 tbsp Ginger-Garlic Paste
  • 1/2 tsp Black Pepper adjust to taste
  • 1 tsp Salt to taste
  • Oil (for frying) consider air-frying
For the Gravy
  • 2 tbsp Vegetable Oil or sesame/olive oil
  • 2 tbsp Garlic chopped
  • 1 tbsp Ginger chopped
  • 2 medium Green Chilies adjust to taste
  • 2 stalks Spring Onions whites
  • 1 medium Red Onion
  • 1 cup Bell Peppers mixed colors
For the Sauce
  • 3 tbsp Soy Sauce dark soy sauce preferred
  • 2 tbsp Chili Sauce Asian for authenticity
  • 2 tbsp Ketchup or tomato puree
  • 1 tbsp Vinegar white or rice
  • 1 tbsp Sugar to balance flavors
  • 1 cup Vegetable Stock or water
  • 1 tbsp Cornflour Slurry to thicken
  • 2 tbsp Spring Onion Greens for garnish

Method
 

Preparation Instructions
  1. Blanch the cauliflower florets in a pot of hot water for 3-4 minutes. Drain and cool.
  2. In a mixing bowl, whisk together all-purpose flour, cornflour, ginger-garlic paste, black pepper, and salt. Gradually add water to form a thick batter.
  3. Heat oil in a deep pan over medium heat. Dip each cauliflower floret into the batter and fry until golden brown, about 4-5 minutes.
  4. In a wok, heat vegetable oil. Sauté garlic, ginger, and green chilies for 1-2 minutes. Add spring onion whites, red onion, and bell peppers, and cook until crisp.
  5. Pour in soy sauce, chili sauce, ketchup, vinegar, sugar, black pepper, and salt. Mix and bring to a boil.
  6. Dissolve cornflour in water to make a slurry. Stir it into the gravy until thickened, about 1-2 minutes.
  7. Add the crispy fried cauliflower to the gravy, toss gently, and let simmer for a couple of minutes. Garnish with spring onion greens before serving.
