  • 2 pounds baking potatoes Yukon Gold or russets
  • 1 cup water or use pan drippings

How to Make Greek Roast Leg of Lamb with Lemon Potatoes
  1. Prepare the Lamb: Trim excess fat from the leg, then butterfly it for easier rolling. Score the inner side gently.
  2. Make the Rub: Sauté the Greek olive oil with shallots, garlic, rosemary, and thyme until fragrant. Mix in spices and lemon zest.
  3. Apply Rub: Spread the rub evenly over the inner side of the lamb. Roll it tightly and secure with kitchen twine. Refrigerate for at least 2 hours.
  4. Roast the Lamb: Let the lamb sit at room temperature for 30 minutes. Preheat oven to 275°F and roast for 1¼ to 1½ hours until internal temperature reaches 130°F–135°F.
  5. Crisp the Crust: Increase oven temperature to 450°F and roast for an additional 8–10 minutes. Allow the lamb to rest for 15 minutes before slicing.
  6. Prepare Potatoes: Preheat oven to 400°F. Combine baking potatoes with olive oil, garlic, oregano, lemon juice, and water; bake for 30–40 minutes.
  7. Finish Potatoes: Broil potatoes for 5 minutes to achieve a crispy outer layer before serving.
