How to Make Grilled Vietnamese Chicken
- Start by trimming excess fat from the chicken thighs, then pound them to an even thickness for uniform cooking.
- In a ziplock bag, combine lime juice, vegetable oil, soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, and red chili flakes. Add the chicken, seal the bag, and massage to coat thoroughly. Let it marinate for at least 30 minutes.
- Preheat your grill to medium-high heat, ensuring it's nice and hot. Lightly oil the grates to prevent sticking.
- Place the marinated chicken on the grill, cooking for 3-5 minutes per side. Use a meat thermometer to check for doneness.
- Remove the chicken from the grill and let it rest for about 5 minutes before slicing and garnishing with fresh cilantro.

Notes
Serve with a drizzle of the leftover marinade reduced into a sauce for extra flavor. Adjust red chili flakes according to spice preference.
