Preparation
- Preheat your oven to 375°F (190°C) and grease a baking dish for easy cleanup.
- In a bowl, combine panko, grated Parmesan, parsley, thyme, rosemary, garlic powder, onion powder, salt, and pepper.
- Carefully slice pockets into the chicken breasts, ensuring you don't cut all the way through.
- Generously fill each pocket with 1-2 tablespoons of Boursin cheese.
- Use toothpicks to secure the openings of the chicken pockets, if desired.
- Brush the tops of each chicken breast with olive oil, then roll in the breadcrumb mixture.
- Place the coated chicken breasts in the greased baking dish, drizzling melted butter over the top.
