Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a baking dish for easy cleanup.
  2. In a bowl, combine panko, grated Parmesan, parsley, thyme, rosemary, garlic powder, onion powder, salt, and pepper.
  3. Carefully slice pockets into the chicken breasts, ensuring you don't cut all the way through.
  4. Generously fill each pocket with 1-2 tablespoons of Boursin cheese.
  5. Use toothpicks to secure the openings of the chicken pockets, if desired.
  6. Brush the tops of each chicken breast with olive oil, then roll in the breadcrumb mixture.
  7. Place the coated chicken breasts in the greased baking dish, drizzling melted butter over the top.
  8. Bake for 30-35 minutes, or until the internal temperature reaches 165°F (74°C) and the crust is golden brown.
  9. Let the chicken rest for a few minutes before serving and remove any toothpicks.
