Preparation
- Preheat the oven to 375°F and grease four holes of an extra-large muffin pan or a loaf pan.
- Whisk together the eggs, parmesan cheese, milk, salt, and pepper in a bowl until frothy.
- Pour the egg mixture into the greased muffin cups or loaf pan; bake for 10-12 minutes until puffed and set.
- Cook the bacon in a skillet over medium heat until crispy; then drain on paper towels.
- Slice the ciabatta rolls in half and arrange them cut-side up on a baking sheet.
- Assemble by placing one egg round on each bun bottom, then top with a slice of gouda and crispy bacon.
- Broil the assembled sandwiches until the cheese melts if serving immediately. To freeze, simply top each with the bun's top, wrap individually, and place in the freezer.
