Method
 

Chilli Chicken Preparation
  1. Cut the chicken thighs into thin slices, about an inch in size. Place them in a large bowl to prepare for marinating.
  2. Add all the marinade ingredients to the bowl with the chicken. Mix well by hand, ensuring every piece is coated. Set aside for about 20 minutes.
  3. Pour oil into a shallow pan, about 1/2 inch deep and heat it over medium-high heat. Once hot, add the chicken pieces carefully and fry for 5-8 minutes until they are golden brown on both sides.
  4. Alternatively, preheat the air fryer to 380°F for 3 minutes. Place the chicken in a single layer in the basket and air fry for 10-12 minutes.
  5. In a separate bowl, mix all the stir fry sauces together. Create a slurry by blending cornstarch and water.
  6. In a wok or large pan, heat 2 tablespoons of oil for stir frying over high heat. Add ginger, garlic, and green chili pepper, sautéing for about a minute until fragrant and golden.
  7. Toss in the diced onions, red bell pepper, and green bell pepper. Sauté for 1-2 minutes until slightly tender.
  8. Pour in the mixed sauces along with the cornstarch slurry. Stir and cook until the sauce thickens beautifully.
  9. Add the fried chicken to the wok, tossing gently for about a minute to ensure the sauce coats the chicken evenly.
  10. Finish by garnishing with the green part of the spring onions and a sprinkle of sesame seeds. Serve immediately.
