Chilli Chicken Preparation
- Cut the chicken thighs into thin slices, about an inch in size. Place them in a large bowl to prepare for marinating.
- Add all the marinade ingredients to the bowl with the chicken. Mix well by hand, ensuring every piece is coated. Set aside for about 20 minutes.
- Pour oil into a shallow pan, about 1/2 inch deep and heat it over medium-high heat. Once hot, add the chicken pieces carefully and fry for 5-8 minutes until they are golden brown on both sides.
- Alternatively, preheat the air fryer to 380°F for 3 minutes. Place the chicken in a single layer in the basket and air fry for 10-12 minutes.
- In a separate bowl, mix all the stir fry sauces together. Create a slurry by blending cornstarch and water.
- In a wok or large pan, heat 2 tablespoons of oil for stir frying over high heat. Add ginger, garlic, and green chili pepper, sautéing for about a minute until fragrant and golden.
- Toss in the diced onions, red bell pepper, and green bell pepper. Sauté for 1-2 minutes until slightly tender.
- Pour in the mixed sauces along with the cornstarch slurry. Stir and cook until the sauce thickens beautifully.
- Add the fried chicken to the wok, tossing gently for about a minute to ensure the sauce coats the chicken evenly.
- Finish by garnishing with the green part of the spring onions and a sprinkle of sesame seeds. Serve immediately.
