Directions
  1. Heat olive oil in a large pot over medium heat. Add shallots and red bell pepper, sauté for 3-4 minutes until tender.
  2. Add sliced red chili pepper and cook for 1 minute. Stir in garlic, ginger, and smashed lemongrass; cook until fragrant.
  3. Add a splash of olive oil followed by red curry paste, stirring for 1 minute to release aromas.
  4. Pour in coconut milk and water, bring to a gentle simmer for 15 minutes, stirring often.
  5. Stir in baby spinach and tortellini. Cook until tortellini is tender per package instructions, about 5-7 minutes.
  6. Turn off heat, stir in lime juice and tamari sauce. Adjust seasoning as needed and serve hot.
