How to Make Chewy Sugar Cookies
- Preheat your oven to 350℉ (180℃) and line 2 cookie sheets with parchment paper.
- In a medium bowl, whisk together flour, cornstarch, baking soda, and salt.
- In a large bowl, beat together butter and sugar until light and fluffy, about 2-3 minutes.
- Mix in the egg, egg yolk, vanilla extract, and almond extract until smooth.
- Gradually add the flour mixture to the butter mixture and mix just until combined.
- Pour sugar for rolling onto a plate. Form dough into 1 tablespoon balls and coat in sugar.
- Place sugar-coated balls 2 inches apart on the cookie sheet.
- Bake one sheet at a time for 9-11 minutes until tops look set and slightly golden.
- Allow cookies to cool on the sheet for at least 10 minutes before transferring to a wire rack.
