Preparation
  1. Start by boiling the whiting knots in simmering water for about 30 seconds. Transfer to a bowl of ice water to stop the cooking process.
  2. In a saucepan, combine the dashi stock, soy sauce, sake, and salt. Bring to a gentle boil, stirring occasionally.
  3. In serving bowls, place the cooked whiting knots. Pour the hot clear soup over the knots and garnish with fresh mizuna leaves.
