Instructions
  1. Sear the Pork: Heat olive oil in a heavy skillet over medium-high heat. Season your pork loin roast with salt and pepper, then sear for 3-4 minutes per side until beautifully browned.
  2. Prepare the Sauce: Mix together cranberry sauce, chicken broth, honey, apple cider vinegar, and minced garlic in a bowl.
  3. Combine in Slow Cooker: Place the seared pork in the slow cooker and pour the prepared cranberry sauce mixture over the top.
  4. Cook: Set your slow cooker to high for 2-3 hours or low for 4-5 hours, checking that the pork reaches an internal temperature of 145-150°F.
  5. Rest and Thicken Sauce: Remove the pork and let it rest for 5 minutes. Whisk cornstarch with water to create a slurry, add it to the sauce in the slow cooker, and cook on high for 5 minutes.
  6. Serve: Slice your tender pork and serve it with the glossy cranberry sauce on top.
