How to Make Pistachio Pound Cake
  1. Preheat your oven to 350°F (175°C). Prepare a loaf pan by lining it with parchment paper.
  2. Blend in a food processor until smooth: shelled pistachios, frozen spinach, and milk.
  3. Mix together sugar, flour, baking powder, and salt in a large bowl.
  4. Fold in the pistachio mixture and half of the lime zest into the dry ingredients.
  5. Pour the batter into the prepared loaf pan and bake for 60-70 minutes.
  6. Cool the cake in the pan for about 10 minutes, then transfer to a wire rack.
  7. Prepare the glaze by mixing powdered sugar with fresh lime juice until smooth.
  8. Sprinkle the remaining lime zest and chopped pistachios on top before slicing.
