  • 1/4 cup raisins or dried cranberries Optional for sweetness.
For the Dressing
  • 1/4 cup olive oil Avocado oil can be used as a substitute.
  • 3 tablespoons lemon juice Substitute with vinegar if needed.
  • 1 teaspoon ground cumin Essential for the Moroccan flavor.
  • 1 teaspoon ground coriander Omit or replace with extra cumin.
  • 1/4 teaspoon cayenne pepper Optional for heat.

Method
 

Preparation Steps
  1. Grate the carrots finely using a grater or food processor.
  2. In a large mixing bowl, combine the grated carrots, drained chickpeas, and chopped cilantro and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, cumin, coriander, cayenne pepper (if using), salt, and black pepper.
  4. Pour the dressing over the carrot and chickpea mixture, gently tossing until well coated.
  5. If using, fold in the raisins or dried cranberries and give it another light toss.
  6. Cover and refrigerate the salad for at least 15 minutes.
