- Prepare the Potatoes: Wash, peel (if desired), and dice the potatoes into even-sized pieces. In a bowl, mix them with oil, chili powder, garlic powder, onion powder, salt, and pepper until fully coated.
- Cook Potatoes: Air Fryer: Preheat to 400°F. Spray the basket with cooking spray, add the seasoned potatoes, and roast for 15-18 minutes, shaking occasionally for even crispiness.
- Cook Potatoes: Oven: Preheat to 400°F. Spread the seasoned potatoes on a baking sheet and roast for 15-20 minutes, flipping halfway through until they are golden and tender.
- Cook the Eggs: In a skillet, heat a little oil or butter over medium-low heat. Once hot, cook the eggs to your preference—scrambled or sunny-side-up—taking care not to overcook.
- Heat the Beans: Warm the black beans in a saucepan over medium heat or in the microwave until heated through, ensuring they blend beautifully with the other ingredients.
- Assemble the Bowls: In each serving bowl, layer the roasted potatoes, warmed black beans, crispy bacon, chopped avocado, and any additional toppings you desire. Finally, add the cooked eggs on top, and serve immediately.
- Optional: For a spicy kick, drizzle with hot sauce before serving.
