  1. Prepare the Potatoes: Wash, peel (if desired), and dice the potatoes into even-sized pieces. In a bowl, mix them with oil, chili powder, garlic powder, onion powder, salt, and pepper until fully coated.
  2. Cook Potatoes: Air Fryer: Preheat to 400°F. Spray the basket with cooking spray, add the seasoned potatoes, and roast for 15-18 minutes, shaking occasionally for even crispiness.
  3. Cook Potatoes: Oven: Preheat to 400°F. Spread the seasoned potatoes on a baking sheet and roast for 15-20 minutes, flipping halfway through until they are golden and tender.
  4. Cook the Eggs: In a skillet, heat a little oil or butter over medium-low heat. Once hot, cook the eggs to your preference—scrambled or sunny-side-up—taking care not to overcook.
  5. Heat the Beans: Warm the black beans in a saucepan over medium heat or in the microwave until heated through, ensuring they blend beautifully with the other ingredients.
  6. Assemble the Bowls: In each serving bowl, layer the roasted potatoes, warmed black beans, crispy bacon, chopped avocado, and any additional toppings you desire. Finally, add the cooked eggs on top, and serve immediately.
  7. Optional: For a spicy kick, drizzle with hot sauce before serving.
