For the Sauce
  • 14 oz Mixed Mushrooms Use Cremini or any available mixed variety.
  • 3 TBSP Extra Virgin Olive Oil Essential for sautéing.
  • 2 Green Onions Can substitute with shallots.
  • 2 cloves Garlic Minced, fresh garlic recommended.
  • Sea Salt & Freshly Ground Pepper For seasoning; adjust to taste.
  • Red Pepper Flakes Use according to spice preference.
  • Fresh Thyme Optional; enhance flavors.
  • 2 cups Fresh Baby Spinach Can substitute with kale.
  • 1 lemon Lemon Zest Adds brightness.
  • 1/2 cup Parmesan Cheese Cut into small chunks; substitute with pecorino.
  • 2-3 TBSP Butter Optional; adds richness.

Method
 

Steps
  1. Prepare the mushrooms by cleaning and thinly slicing them. Sauté in a heavy skillet over high heat for 5-7 minutes.
  2. Cook the fettuccine in a pot of salted boiling water according to package instructions (8-10 minutes).
  3. Add olive oil to the skillet with the mushrooms, toss in green onions, and sauté for 2 minutes.
  4. Stir in minced garlic, sea salt, pepper, and red pepper flakes; cook for 2-3 minutes.
  5. Fold in chopped spinach until wilted, about 1-2 minutes, then add lemon zest.
  6. Drain the fettuccine, reserving ½ cup of cooking water. Combine pasta with the mushroom mixture and add Parmesan and optional butter.
  7. Serve warm, garnished with more Parmesan cheese.
