How to Make Zucchini Lasagna Rolls
- Prepare Ricotta Filling: In a mixing bowl, combine ricotta, cottage cheese, Parmesan, parsley, basil, garlic powder, red pepper flakes, and salt. Blend until smooth for a creamy filling, then refrigerate to firm it up.
- Grill Zucchini: Heat your grill to medium-high. Slice zucchini into planks about 1/4 inch thick and grill for about 2 minutes on each side until they are soft and tender.
- Preheat Oven: Set your oven to 375°F (190°C) so it's ready for baking.
- Assemble Rolls: Spread a layer of marinara sauce at the bottom of a baking dish. Fill each zucchini plank with a generous spoonful of the ricotta mixture and crumbled sausage, then roll tightly and place seam-side down in the sauce.
