Cooking Instructions
  1. Heat the olive oil in a large pot over medium-high heat until shimmering, then add chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and sun-dried tomatoes. Cook for 2-3 minutes until fragrant.
  3. Stir in the tomato paste and cook for another couple of minutes.
  4. Pour in the chicken stock, scraping the bottom of the pot to deglaze.
  5. Gradually mix in heavy whipping cream until thoroughly combined.
  6. Season with kosher salt, pepper, and red chili flakes according to taste.
  7. Add the penne pasta and stir well. Cook uncovered for about 10 minutes.
  8. Stir in fresh spinach and basil, letting the spinach wilt.
  9. Mix in grated Parmesan cheese until melted.
  10. Serve warm and enjoy! Garnish with more fresh basil if desired.
