Ingredients
  

For the Panna Cotta
  • 1 cup Heavy whipping cream Can substitute with full-fat coconut cream for a dairy-free option.
  • 3/4 cup Milk Plant-based milk can be used as a lactose-free alternative.
  • 2 teaspoons Agar-Agar powder Essential for setting; do not substitute with gelatin.
  • 1/2 cup Sugar Adjust to taste or use stevia for a healthier twist.
  • 1 pinch Salt Enhances overall flavor.
For the Paan Blend
  • 5 pieces Betel Leaf (Paan leaf)
  • 1 teaspoon Fennel seeds Can be omitted if preferred.
  • 2 tablespoons Gulkand (Rose Petal Jam) If unavailable, substitute with fruit preserves.
  • 2 tablespoons Thandai Powder Can replace with cardamom and almond powder.
  • 2 tablespoons Water Used for blending.
For Garnish
  • a few strands Saffron strands For enhancement of flavor and presentation.
  • 2 pieces Cherries For garnish.
  • to taste Thandai For drizzling over the top.

Method
 

Preparation
  1. Start by mixing 3/4 cup milk with agar-agar powder in a bowl. Let it rest for 7-8 minutes so the agar-agar can bloom properly.
  2. In a blender, combine the betel leaves, fennel seeds, gulkand, thandai powder, and 2 tablespoons of water. Blend until smooth, then strain the mixture through a fine sieve.
  3. In a saucepan, gently heat 1 cup of heavy whipping cream along with the remaining 1/4 cup of milk. When warm, add sugar and whisk until fully dissolved.
  4. Once the sugar is dissolved, stir in the bloomed agar-agar mixture until it completely dissolves. Then add the strained paan blend, mixing it well.
  5. Allow the mixture to cool for about 5 minutes, then strain it again to ensure a silky consistency. Grease your ramekins with a little oil or non-stick spray before pouring in the panna cotta mixture.
  6. Let the filled ramekins sit at room temperature for 15-20 minutes before transferring them to the refrigerator. Chill for at least 5 hours or until fully set.
  7. When ready to serve, warm the bottoms of the ramekins in lukewarm water for a few seconds. Gently loosen the edges with a knife, then invert each ramekin onto a plate, garnishing with thandai, saffron, and a cherry.
