Method
 

Preparation
  1. Preheat your oven to 390°F (200°C) and line a baking sheet with parchment paper.
  2. Dice zucchini, bell pepper, and broccoli into bite-sized pieces, drizzle with olive oil, and sprinkle with Italian seasoning.
  3. Season the chicken breasts with olive oil, sweet paprika, garlic powder, salt, and black pepper.
  4. Arrange the vegetables on one side of the baking sheet and the chicken alongside them, ready to roast.
  5. Roast everything for 18-20 minutes until chicken reaches 165°F and vegetables are tender.
  6. Prepare quinoa according to package instructions, then fluff with a fork.
  7. In serving bowls, add quinoa, layer with roasted vegetables and chicken, mix with pesto, and garnish with fresh basil.
