Instructions
  1. Preheat the oven to 350°F (175°C) and grease two baking sheets.
  2. Mix together the light brown sugar and vegetable oil in a large bowl until well combined and creamy.
  3. Add in the canned pumpkin, large eggs, and vanilla extract, and beat until the mixture is smooth and well blended.
  4. Whisk together the flour, ground cinnamon, pumpkin pie spice, salt, baking powder, and baking soda in a separate bowl.
  5. Fold the dry ingredients into the wet mixture until just combined. Then, refrigerate the dough for 20 minutes.
  6. Scoop tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart. Bake for 12-14 minutes.
  7. Prepare the frosting by beating softened butter and cream cheese together in a bowl until creamy.
  8. Gradually incorporate powdered sugar and vanilla extract into the cream cheese mixture until fully blended and smooth.
  9. Frost the upside-down half of cooled cookies generously with the cream cheese filling, then sandwich with another cookie half.
