- Preheat the oven to 350°F (175°C) and grease two baking sheets.
- Mix together the light brown sugar and vegetable oil in a large bowl until well combined and creamy.
- Add in the canned pumpkin, large eggs, and vanilla extract, and beat until the mixture is smooth and well blended.
- Whisk together the flour, ground cinnamon, pumpkin pie spice, salt, baking powder, and baking soda in a separate bowl.
- Fold the dry ingredients into the wet mixture until just combined. Then, refrigerate the dough for 20 minutes.
- Scoop tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart. Bake for 12-14 minutes.
- Prepare the frosting by beating softened butter and cream cheese together in a bowl until creamy.
- Gradually incorporate powdered sugar and vanilla extract into the cream cheese mixture until fully blended and smooth.
- Frost the upside-down half of cooled cookies generously with the cream cheese filling, then sandwich with another cookie half.
